Reduce Waste Recipes: Fridge Soup

Need some help reducing waste in your household? Karen Davis, from NR2 Foodbank, has an easy recipe for using up food that might go to waste.



Serves 2


200g chopped veg (whatever is in the bottom of the fridge but still good to eat)

300g potatoes (diced)

1 tbsp oil

700 ml stock

Dried herbs or spices of your choice


1. Fry the veg in the oil until soft.

2. Add the herbs or spices and cook for a minute.

3. Add the potatoes and stock and then cook for 10-15 minutes until the veg is tender.

4. Serve as it is or blend to make a smooth soup.


The soup will freeze for up to a month.
